Ingredients (For Four People)
- 600 grams of veal or beef (cut into large chunks)

- 1 tomato, diced or whole; or tomato paste (optional)
- 1 celery root (or 3 celery stalks), chopped or whole
- 1 parsnip, sliced
- 1 bay leaf
- 5-6 black peppercorns
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon black pepper
- 1 bunch fresh parsley, chopped (for garnish)
- 2 liters water or beef broth (or enough to cover the meat and vegetables)

1 tablespoon is circa 15 ml, and a teaspoon is circa 5 ml.
Preparation Method
Step 1: Prepare the Meat
Rinse the veal or beef under cold water and cut it into large chunks. Place the meat in a large pot and cover with 2 liters of water. Bring to a boil over medium heat, skimming off any foam on the surface.
Step 2: Add Vegetables and Spices
Once the meat is simmering, add the quartered onion, sliced carrots, potatoes, celery, parsnip, bay leaf, black peppercorns, and salt. Lower the heat to medium-low, cover the pot, and let the soup simmer gently for 1.5 to 2 hours until the meat is tender and the vegetables are soft.
Step 3: Check the Seasoning
Taste the broth and adjust the seasoning by adding more salt and pepper if necessary. If you prefer a more robust flavor, continue simmering the uncovered soup for 15 minutes to concentrate the broth.
Step 4: Serve the Soup
Once the meat and vegetables are tender, remove the bay leaf. Ladle the soup into bowls, ensuring each serving has a good mix of meat and vegetables. Garnish with freshly chopped parsley and serve hot.
